Ingredients
2 Turkey legs, cooked & de-boned
1 Tablespoon olive oil
1 Green pepper, diced
1 Small onion, diced
3 Large cloves garlic, diced
1 Tablespoon dried basil
2 Teaspoons fennel seeds
1/4 Teaspoon crushed red pepper
6 Cups broth from the cooked turkey or canned broth
1 Can of diced tomatoes
1 Carrot, diced
2 Medium zucchini, sliced
1 Package of tortellini
Parmesan for serving
Instructions
Using the olive oil saut�' the green pepper, onion, garlic and carrots. Add to crockpot with the broth. Add seasonings and cook on LOW all day. One hour before serving add the tortellini, zucchini and turkey pieces. Check for doneness at 25 minutes. Serve with fresh grated Parmesan on top and good hearty bread.
