Ingredients
2 Cups milk
1/2 Cup white sugar
1/3 Cup flour
2 1/2 Tablespoons cornstarch
1/2 Teaspoon salt
2 Egg yolks
1 Tablespoon butter
1 Tablespoon vanilla
2/3 Cup coconut
1 Baked pie shell
Instructions
Scald 1 1/2 cups of milk.
Combine the sugar, flour, cornstarch and salt.
Mix the remaining 1/2 cup of milk with the egg yolks and stir into the dry ingredients gradually.
Stir this mixture into the hot milk and cook until thickened. Let it bubble all the way through for 1 minute while stirring constantly.
Remove from heat, add the butter and vanilla and chill.
Tip: While cooling the filling, cover it with plastic wrap to prevent a skin from forming on top.
After cooling, stir in the coconut.
Put in a baked pie shell.
Top with whipped cream and sprinkle coconut on top.
