Ingredients
1 (9�) Pastry shell, unbaked
1(8oz) Package cream cheese, softened
1/4 Cup sugar
1/2 Teaspoon vanilla
1 Egg
1 1/4 Cups canned or cooked pumpkin
1/2 Cup sugar
1 Teaspoon cinnamon
1/4 Teaspoon ginger
1/4 Teaspoon nutmeg
Dash of salt
2 Eggs, slightly beaten
1 Cup evaporated milk
Instructions
Combine cream cheese, sugar and vanilla. Add egg, ix well. Spread on bottom of a deep, 9-inch unbaked pastry shell.
Combine pumpkin, sugar, cinnamon, ginger, nutmeg and salt. Mix well. Blend in eggs and evaporated milk. Carefully pour over cheese mixture.
Bake at 350F for 65 to 70 minutes or until done, cool.
