Ingredients

4 Bacon slices
1 1/4 Cups any combination of dried beans
1 Onion, chopped
3 Cups water
1 Packet taco seasoning mix
2 (14 oz) Cans diced tomatoes, undrained

Instructions

Cook bacon until crisp, drain on paper towels, and crumble. In 3 to 4 quart crockpot, combine bacon with beans, onion, water, and taco seasoning mix and mix well to blend. Cover and cook on LOW for 8 to 10 hours or until beans are tender.
Add tomatoes during last 2 hours of cooking time. Adding tomatoes at the beginning will cause the beans to remain tough.
