Zucchini Soup

Ingredients

3 Pounds zucchini, cut into bite size pieces
1 Large onion, diced
1 Can chicken broth
2 Cans water
3 Teaspoons salt
1 Teaspoon basil
Pepper, to taste
4 Slices bacon, chopped

Instructions

Cook bacon in Dutch Oven or large saucepan until done and slightly crisp. Add onions and cook until limp. Add all other ingredients and boil together for about a half hour. Let cool a bit and blend in blender (DO NOT FILL BLENDER FULL) or food processor until smooth. Serve with Parmesan cheese or a dollop of sour cream.
