Description
The addition of jalapnos and grilling them while frozen really brings out the flavor and spice.
Ingredients
2 Pounds lean ground beef
5 Fresh jalapenos, coarsely minced
1 Teaspoon salt
3 Garlic cloves, finely minced
1/2 Onion, finely minced
3/4 Pound sharp cheddar cheese, crumbled (not shredded)
Pinch of cumin
Pinch of black pepper
Instructions
Mix all ingredients in a bowl of sufficient size.
Form into patties 5/8” to 3/4” thick. The thickness is more important than diameter. Make the diameter slightly larger than the buns that will be used.
Place the patties in a freezable container that allows the patties to remain flat. Put some saran wrap or wax paper (or something) in between each patty so they don’t become one while in the freezer.
Freeze them solid; overnight should do it. Obviously, these can be prepared days in advance of cooking.
DO NOT thaw before cooking. Cook FAST with high heat. Broil in the oven till they look done on the outside works real well. Flip once during cooking.
Charbroil on gas or wood flame grill is good too – be mindful that you need plenty of heat. Might make for a messier than normal cleanup on a gas grill.
