Ingredients
1 Pound ground beef, cooked
1/4 Cup onion, diced
1 (10 1/2 oz) Can cream of chicken soup
1 Cup mixed vegetables
2/3 Cup milk + 1/4 Cup milk
2 Eggs
2 (8 1/2 oz) Boxes Jiffy Corn Muffin Mix
2 Cups shredded cheddar cheese
Salt & pepper to taste
Instructions
Preheat oven to 350�F and liberally grease a 9" x 13" casserole dish.
Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to a large bowl
Mix well and spread into the casserole dish.
In another large bowl, add the cooked ground beef, diced onion, vegetables, cream of chicken soup, salt and pepper, and half of the shredded cheese, mix well.
Add the 1/4 cup milk and mix to combine.
Spread over the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.
Bake for 30 minutes.
