Ingredients
2 Ripe avocados, peeled, pitted & diced
2 Teaspoons lemon juice
3 Medium tomatoes, seeded & diced
1/4 Cup sweet onion, diced
1/4 Cup fresh parsley, chopped
1/4 Cup olive oil
1/4 Cup red wine vinegar
Salt & pepper to taste
Instructions
Combine avocados, lemon juice, tomatoes, onion, and parsley in a bowl and toss. Combine oil, vinegar and salt and pepper and shake. Pour over avocado mixture and chill until ready to serve.
