Ingredients
8 Ounces mini penne pasta or macaroni
8 Bacon slices, diced & cooked until done but not crisp
2 Cups chicken thighs, cooked & diced
1/2 Cup red onion, finely chopped
2 Plum tomatoes, seeds removed, diced
2 Celery ribs, diced
2 Tablespoons fresh parsley, chopped
1/2 Teaspoon garlic powder
1/4 Teaspoon ground black pepper, or to taste
Salt to taste
1/2 to 3/4 Cup mayonnaise
Juice of 1/2 lemon
Instructions
Cook pasta following package directions; drain in a colander and rinse under cold water. In a large bowl, combine the diced bacon, chicken, red onion, tomatoes, celery, and parsley. Toss to blend the ingredients. Stir in 1/2 cup of mayonnaise and the lemon juice. Stir in the garlic powder, pepper, and salt, to taste.
