Ingredients

1 (14 1/2 oz) Can chicken broth
1 1/2 Cups uncooked instant rice
2 Tablespoons butter, divided
1 Pound ground beef
1 (12 oz) Package bulk spicy pork sausage
1/2 Pound fresh mushrooms, sliced
3 Garlic cloves, minced
1 (10 oz) Package frozen chopped spinach, thawed & squeezed dry
1 Cup cottage cheese
4 Eggs, beaten
1/2 Envelope onion soup mix
1/2 Envelope leek soup mix
1 Teaspoons garlic powder
1/2 Teaspoon Creole seasoning
1/8 Cup grated Parmesan cheese

Instructions

In a large saucepan, bring broth to a boil. Stir in rice; cover and remove from the heat. Let stand for 5 minutes. Stir in 2 tablespoons butter; set aside.
Meanwhile, in a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Transfer to a large bowl. In the same skillet, saut� mushrooms and garlic in remaining butter until tender; add to meat mixture. Stir in the spinach, cottage cheese, eggs, soup mixes, garlic powder, Creole seasoning and reserved rice mixture.
Place mixture in a greased 13" x 9" baking dish and sprinkle with Parmesan cheese. Cover and bake at 350�F for 45 minutes. Uncover; bake 10 to 15 minutes longer or until heated through.
