Ingredients

4 Large pork chops
4 Tablespoons lemon juice
2 Tablespoons cooking oil
2 Teaspoons garlic, chopped
1 Tablespoon shallots, chopped
1 Egg, beaten
4 Tablespoons flour
4 Tablespoons bread crumbs
Salt to taste
Pepper to taste
Tabasco sauce to taste
Flat parsley for garnishing

Instructions

In a large bowl, mix together the lemon juice, oil, garlic, shallots, and season with salt, pepper and Tabasco sauce. Coat pork chops in the mixture, then leave to marinate in the refrigerator for about 1 hour.
Dust pork chops with flour; dip in egg and coat in breadcrumbs.
Pan-fry pork chops over medium heat for about 5 to 7 minutes on each side, until golden and cooked. Drain on paper towels and serve with lemon slices and gumbo.
