Ingredients
2 Pounds waxy or new potatoes boiled peeled and cut in to bite size cubes
2 Tablespoons red wine vinegar
1/2 Teaspoon salt
Freshly ground black pepper to taste
1/2 Cup mayonnaise
1/4 Cup sour cream
1/4 Cup red onion, diced
2 Hard boiled eggs, peeled & diced
1/2 Cup celery, diced
1/4 Cup bread and butter pickle, diced
3 Tablespoons minced chives or scallions
Instructions
Combine the just cooked and peeled potatoes with vinegar, salt and pepper. Let sit at room temperature for 30 minutes; add remaining ingredients and taste. Add a pinch of salt for extra flavor if you like. Serve immediately or refrigerate until serving.
